I learned about Soleil Mimosa at the 2016 Santa Fe Wine & Chile Fiesta.  Amongst the diverse groups of Wine, Prosecco and Champagne, Soleil Mimosa was the STAR of the show for me.  I sampled all four varieties at more than one Wine & Chile event and it quickly became a favorite and is my go-to bottled mimosa.
Soleil Mimosa is a product of New Mexico’s St. Clair Winery and is available in four varieties including a Classic Orange, Pomegranate, Pineapple and Mango.  Mimosa comes in 750 ml glass bottles and packs of four-187 ml cans.

I am a huge fan of Soleil Mimosa, primarily because of the sweet-crisp flavors, its four varieties, the light effervescence, and the perfectly blended and proportioned juice and white wine.  My experience with effervescent or sparkling wines is that they lose their carbonation rather quickly.  I unwilling opened a new Pomegranate bottle, knowing I would not drink it all.  I sealed the bottle with a wine preserver after drinking a couple of glasses and to my surprise, the Pomegranate Mimosa was just as delicious and effervescent the next day.
Of the four varieties, Pomegranate is my top favorite followed by Pineapple and Orange.  I love Mimosa’s no fuss factor.  If I am hosting a brunch, I don’t have to purchase both a bubbly and juice nor worry about pouring the right combination of both liquids for a perfectly balanced mimosa.  The Soleil mini’s are perfect for picnic’s, tailgating or poolside sippers.  The price point for Mimosa is also reasonable, ranging from $8.99 – $11 per 750 ml bottle, depending on the retailer.
​Although I typically reserve Soleil Mimosa’s for brunch, they pair perfectly with any meal.  I had a glass of  Pomegranate Mimosa to accompany a Big Double Burger from the Cook Out and the combination was delicious.  I have also paired Mimosa with cheese and fruit and the occasional Schezuan take-out.
